Veal Stew

2 Lbs Veal cut into 1" cubes
1 Onion chopped
3 Tbs oil or lard
1 Tbs Paprika
salt to taste
1 green pepper chopped
1 12 oz can tomatoes
1 or 2 cloves of garlic


Heat the half the oil in large saucepan and
fry the onion gently until golden. Remove
from pan and set aside. Add remaining lard
or oil and brown meat. Remove meat and set
aside. Deglaze pan with water and add meat
paprika and onions back into pot. Add tomatoes,
pepper, and garlic and add enough water or stock
to cover all the ingredients. Simmer. Reduce the
heat to low, cover the pot, and braise slowly for
about 45 minutes to 1 hour or until very tender.
Add salt to taste and check to see whether a little
more paprika is needed. Serve with Galuska.
