Potato Doughnuts

4 ounces potatoes
8 ounces butter
2 ounces yeast (dissolved in milk)
2 ounces sugar
4 ounces flour
8 egg yolks
pinch of salt
Bake some potatoes, remove jackets and
press through sieve. Work ingredients into
a smooth dough, beat with spoon until light
and let rise in warm place for an hour.
Afterwards, roll dough into 1/2 inch round
and cut 2 1/2 inch long. Form into rounds
and let rise again. Drop rounds into
boiling
lard (or oil) until lightly browned. Drain and
serve with cinnamon and castor sugar. A
healthy, low fat snack, lol!
