Pork Stew with Bacon
Csikos Tokany

1 onion chopped
1/4 Lb slab bacon sliced
3 Tbs lard
2 Lbs pork butt 1" cubes
2 Tbs paprika
salt to taste
1/4 tsp caraway seeds slightly crushed
1 green pepper sliced
14 oz can tomatoes
1/2 cup sour cream

Sauté slab bacon till crisp and set aside.
Sauté onions and set them aside. Brown the
meat and deglaze the pan with water or stock.
Add all ingredients and add enough stock or
water to cover meat. Simmer 1 or 2 hours or
until the meat is tender. Serve over dumplings.
