Gypsy Style Fried Ham Slices -

2 smoked ham slices cut 1/4-1/2 in thick
1 1/2 cups chicken broth
2 tbs reserved fat (from ham)
3 tbs fine dry bread crumbs
4 tsp vinegar
1 tsp sugar
salt & pepper to taste
1 tbs chopped parsley
Cut ham into pieces around 1/2 - 1 inch cubes
and panfry until slightly brown. Set ham aside
and reserve 2 tbs of the fat, If not enough
fat you can use butter or lard. Add fat to
skillet and brown lightly, add bread crumbs
while stirring. Remove from heat and gradually
add broth, vinegar, and sugar. Bring mixture
to a boil for a few minutes, take off heat and
add parsley. Pour sauce over meat and serve.
Salt and pepper to taste.
