ANOTHER GREAT WAY TO USE UP A LARGE CROP OF CHILLIES IS TO MAKE SALSA.
SALSA IS AN UNCOOKED SAUCE TRADITIONALLY, BUT I ALSO MAKE COOKED ONES.
TO MAKE A BASIC SALSA TAKE 3 LARGE TOMATOES,
1 LARGE ONION, 3-4 GARLIC CLOVES, 2-3 TABLESPNS FRESH CORIANDER AND PEPPERS TO TASTE.
YOU CAN THEN ADD OTHER INGREDIENTS SUCH AS MANGO OR ANY OTHER FRUIT, OTHER HERBS OR ANYTHING YOU LIKE, DON'T BE AFRAID TO TRY ANYTHING.
YOU SHOULD ALWAYS HAND CHOP ALL INGREDIENTS AND THEY SHOULD BE MADE FRESH AND ARE GREAT WHEN EATEN WITH TORTILLAS OR DIPPING CHIPS
