Cranberry Orange Bread

2 cups flour
1 cup sweetner
1/2 tsp salt
1 1/2 tsp baking powder
1/2 tsp baking soda
In a large bowl mix those dry ingred.'s

2 tbs oil
hot water
1/2 cup orange juice
tbs grated orange peel
1 egg replacer
1 cup cranberries
1/2 cup walnuts

_preheat oven to 375, combine wet and dry ingred- with the oil, put it in a measuring cup and then top up to 3/4 cup of hot water. Fold in the cranberries and walnuts and bake for around an hour or until done.
*I have to say I have not tried this recipe yet, but I will this week.~

Bread for a week

Here is a great recipe from "Battling the MSG Myth: a survival guide and cookbook", by Debby Anglesey:
7 cups very warm water
1/2 cup applesauce
1/4 cup honey
3 tablespoons dry yeast
2/3 cup oil
2 teaspoons salt
15 to 17 cups whole wheat flour or mixture of white and wheat

Mix all but flour in a large bowl. Add 8 cups flour and blend well. Let sit for 10 minutes. Add 7 to 9 more cups flour and mix thoroughly.
Dough should be soft and a little sticky. Knead for 10 to 15 minutes. Let rest for 5 minutes and then knead for 1 more minute. Oil bread pans (4 large or 5 medium) and divide dough into quarters. Shape into loaves and place in pans. Let rise until doubled. Bake at 350 degrees for 30 minutes. Freeze some loaves for later in the week.

I only have 2 bread pans, so I divide the recipe in half. It is a good recipe, though. Hope this helps! ~marilee



A Vegan Cornbread Recipe

Sweet cornbread:

375* 20-30 minutes

1 cup cornmeal
1 cup WW pastry flour
1 tbsp baking powder
1/4 cup oil ( I substitute 1/8 cup applesauce)
1 cup soy or rice milk
1/3 cup maple syrup (Or molasses, you can probably use honey as well)

Mix dry ingredients, mix wet in a seperate bowl, then add wet to dry. The batter will be lumpy.

That's it! My kids love these, I usually make muffins and they'll eat the rest the next day for snacks or breakfast. ~ sagewinna

Egg Replacer
My corn bread recipe has an egg too. HOWEVER, have you tried the trick of using one tablespoon of water and a heaping tablespoon of soy flour to replace an egg in your recipes? I have not tried this using NO eggs, but have when I was short one or two. Corn bread might be a good place to try this; it's pretty dense and may hold up.~ Granola Girl

Shay's Awesome Banana Bread

* 4 very ripe bananas (smashed)
* 1/2 cup margarine
* a little less than one cup of sucanat
* 2 fat tablespoons of apple sauce
* 1 tsp. baking soda
* 2 cups unbleached flour
* 2 tsp. vanilla
* pinch of salt & dash of cinnamon

Cream margarine. Add apple sauce when creamed. Add flour, soda, salt, cinnamon, and sucanat. This will be really dry, but don't worry. Add the smashed bananas and the vanilla. Mix well and pour into a loaf pan. Bake at 350 degrees for about an hour. Enjoy! ~erinandclover


Banana Bread

These are for muffins, but they are very easy and really good.

3 T. brown sugar
1 T. sour cream
1/3 c. broken pecans

3 small bananas
1 egg slightly beaten
1/2 c. sugar
1/4 c. oil
1 1/2 c. pancake mix

Grease or line muffin cups with paper liners. Mix first 3 ingredients in a small bowl and set aside.

In a medium bowl mash bananas. In a separate bowl combine egg, sugar, oil, and mashed bananas, stirring until blended. Add the pancake mix, stirring just until moistened. Fill prepared muffin cups 2/3 full. Top each muffin with 1 tsp. of the pecan mix. Bake 400 degrees 10 to 15 minutes or until brown. Makes 12 muffins ~loolee


Banana Bread
350 preheat oven

Smash 4 bananas (I usually smash 10 apple bananas, they are small)
1/4 Cup oil
1 Cup date sugar
1/4 Cup plus 2Tablespoons applesause
1 teaspoons baking soda
2 teaspoons vanilla
pinch of salt and a dash cinnamon
2 Cup whole wheat pastry flour

Mix it all together. the batter will be dry-ish.
Pour into a 8x8 greased pan (brownie pan) or in a loaf pan.

If in the square pan cook for 30 minutes.
In the bread loaf pan an hour.
I never have cooked it in a bread loaf pan.~jvanlaanen


Banana Bread

3 large bananas mashed
1 cup turbinado sugar
Ener-G equivalent to one egg
1 1/2 cups flour
1/4 cup oil
1 teaspoon baking soda
1 teaspoon salt
1/2 cup chopped walnuts (optional)

Combine all ingredients and mix well. Pour into greased loaf pan. Bake in preheated oven at 325 degrees for one hour. ~BumbleBee70

Ezekiel Bread
2 1/2 cups wheat berries
1 1/2 cups spelt flour
1/2 cup barley
1/2 cup millet
1/4 cup dry green lentils
2 tablespoons dry Great Northern beans
2 tablespoons dry kidney beans
2 tablespoons dried pinto beans
4 cups warm water (110 degrees F/45 degrees C)
1 cup honey
1/2 cup olive oil
2 (.25 ounce) packages active dry yeast
2 tablespoons salt

Directions
1 Measure the water, honey, olive oil, and yeast into a large bowl. Let sit for 3 to 5 minutes.
2 Stir all of the grains and beans together until well mixed. Grind in a flour mill. Add fresh milled flour and salt to the yeast mixture; stir until well mixed, about 10 minutes. The dough will be like that of a batter bread. Pour dough into two greased 9 x 5 inch loaf pans.
3 Let rise in a warm place for about 1 hour, or until dough has reached the top of the pan.
4 Bake at 350 degrees F (175 degrees C) for 45 to 50 minutes, or until loaves are golden brown.

Makes 2 loaves~6Muffins

 

BREAD MACHINE EZEKIEL BREAD

1 cup Water
1/4 cup Red Kidney Beans - (cooked and Drained)
1/4 cup Lentils - (cooked and drained)
1 1/2 tablespoons Olive Oil
1 1/2 tablespoons Honey
3/4 teaspoon Salt
2 cups Bread Flour
1/2 cup Barley Flour
1/2 cup Millet Flour
2 tablespoons vital gluten
1 1/2 teaspoons Yeast

Put all ingredients into the bread pan and push start. ~6Muffins


Flax and Sunflower Seed Bread

I just made this for the first time today and it is SO good! I would love to give credit where credit is due, but I cannot remember where on the www I found this recipe.

FLAX AND SUNFLOWER SEED BREAD

1 1/3 c water
2 Tbsp margarine, softened
3 Tbsp honey
1 1/2 c bread flour
1 1/3 c whole wheat bread flour
1 tsp salt
1 tsp active dry yeast
1/2 cup flax seed
1/2 cup sunflower seeds

Place all ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select basic white cycle.

The recipe says to hold out the sunflower seeds until the *mix in* beep, but I put them in at the beginning, with everything else, and it was just fine. ~Bonny
