Johnny's Peanutty Beef Stew 6 to 8 servings 2 tablespoons vegetable oil 2 pounds beef stew meat, cut into 1-inch chunks 2 medium onions, chopped 2 cups water 3 medium tomatoes, chopped 1 can (4.5 ounces) chopped green chilies, drained 1/2 teaspoon ground red pepper 1 teaspoon salt 1 cup creamy peanut butter 1. In a large soup pot, heat the oil over medium-high heat. Add the beef and onions; stir until the beef is browned. Add the water, tomatoes, green chilies, ground red pepper, and salt. Bring the mixture to a boil. 2. Reduce the heat to low, cover, and cook for 1-1/2 hours, or until the beef is tender. In a small bowl, combine the peanut butter with 1 cup stew juices, slowly stirring in the juices. Stir peanut butter mixture into the stew and simmer for 2 minutes, or until heated through.
