| Mash in 7 gal. Filtered water @ 100* hold for 30 min. Raise to 131* hold 15 min. Raise to 140* hold 35 min. Raise to 155* hold 30 min. Mash out @ 168* for 15 min. Sparge @ 168* with enough water to bring the kettle to 12 gal. Boiling time 90 min add hops (see above). Cool wort to 70* pitch yeast (white labs WLP8 San Francisco lager yeast, 750 mls). Ferment @ 64* for 7 days then rack into a seconday fermenter, continue @ 60* until fermentation is complete. Note: If you are not able to do a step mash, a single temp mash will work just fine. Mash at 152*-155* for 60-75 min or until converted (*) = Degrees |
