| Koriander Meatballs
Elfiede Presig Ingredients: 500 g minced meat lamb 500 g minced meat beef 5 shallots, chopped up very finely 6-7 cloves of garlic,crushed 2 boiled potatoes, peeled OR 50g dry bread soaked and drained 2 eggs 1 bunch of fresh Koriander (100 g) coarsely chopped pepper, salt 1 tbsp. Tapenade (paste of sundried tomatoes) optional olive oil for the frying Put all ingredients except the fresh Koriander in the blender and mix well, not too finely though. At the end add the coarsely chopped koriander for a very short time. Remove from mixing bowl and form with wet hands small balls that you fry in olive oil for 3-4 minutes on all sides before serving. You can also prepare them ahead of time and simply reheat before serving either as a tapa dish with garlic bread or with salads or the like. Serves 10-12 people |
