Beach Street Cajun Shrimp

� c. olive oil
1 clove garlic, whole
2 Tbsp Cajun seasoning
(or a mixture of chili powder, cayenne, red pepper flakes)
2 Tbsp lemon juice
2 Tbsp minced parsley
1 Tbsp brown sugar
1 Tbsp soy sauce
16 extra large shrimp


Combine first 7 ingredients (oil thru soy) and place in a flat dish or ziplock bag to be used for marinading.

Shell and devein the shrimp, pat dry and toss in the marinade to coat.  Refrigerate 1 to 12 hours.

Preheat oven to 450�.  Remove garlic clove.  Bake for 7 � 10 min, stirring occasionally � be sure not to overcook.  Or grill them on skewers.

Makes 4 servings of 4 shrimp each.


Personal Notes:
I marinaded overnight (longer than 12 hours) and they were fine.  I cut up the garlic into slices to spread more of the flavor and used a ziplock back to marinade in.  I grilled them with pineapple on skewers.
