APPLE CINNAMON MUFFINS ~ makes 36

4 � cups w/w s/r flour
1 � t mixed spice
1 � t ground cinnamon
1 � cups golden raisins
6 egg whites
5 T oil
3 cups cooked, chopped apple
3 T�s honey
1 � cups soy milk

Preheat oven to 180.  Sift flour and spices.  Add raisins.  Beat egg whites and add to oil, apple, honey and soymilk and blend.  Add to dry ingredients and stir until thoroughly mixed.  Spoon into greased muffin tin.  Bake for approximately 20 minutes. 

PUDDING CAKE

1 box yellow cake mix
1 can crushed pineapple
� cup sugar
2 small packets instant vanilla pudding
3 cups milk
whipped topping
� c flaked coconut

Bake cake.  While cake bakes, boil pineapple with sugar until syrupy.  When cake is baked, poke holes in top and pour the pineapple mixture on top; spread evenly.  Cool.  When cake is cool, mix the 2 boxes of pudding with 3 cups milk and spread over cake.  Next, mix the whipped topping with coconut and spread over cake. Refrigerate.  (Cake is best if made 24 hours before serving).

SOUR CREAM CHOCOLATE MUFFINS - makes 24 muffins

Semisweet chocolate
Baking chocolate
2/3 cup butter
1.5  cups sour cream
1 � cups brown sugar
� cup light corn syrup
2 eggs
4 teaspoons vanilla
3 cups flour
2 teaspoons baking soda
� teaspoon salt
1 cup chocolate chips

Mix semisweet chocolate, baking chocolate and butter together, then melt carefully in microwave or over simmering water in double boiler.  Allow to cool to lukewarm.  Mix sour cream, sugar, corn syrup, egg and vanilla.  Blend with melted chocolates.  Blend flour, soda and salt, then add to the chocolate mixture and blend very well.  Add the chocolate chips.  Pour batter into 24 paper lined or greased muffin tins.  Bake in preheated oven 180 degrees for 20 minutes.  Remove from muffin tins and allow to cool on wire racks. 

TEXAS CAKE

Place in a bowl:
2 cups flour
2 cups sugar
2 eggs
� cup sour cream
� tsp salt
� tsp soda
1 tsp vanilla
Place in pan
2 sticks butter
4 Tbls cocoa powder
1 cup water
Bring this to boil and add to flour mixture and beat well.  Pour into a greased cookie sheet that has a rim on the edge.  Bake at 180 degrees for 25-30 minutes.
Place in a bowl:
1 whole box of powdered sugar
1 cup of chopped and toasted nuts - pecans
1 tsp vanilla
Place in a pan
1 stick of butter
4 Tbls cocoa powder
6 Tbls milk
Bring to boil and beat well with the sugar mix.  Pour over and frost cake as soon as it comes from oven.  It will set up quickly on its own. 

FRESH APPLE COFFEE CAKE

2 cups biscuit mix
2/3 cups applesauce
� cup milk
2 Tbls sugar
2 Tbls butter - softened or melted
2 apples, peeled, cored and diced
1 tsp cinnamon
1 tsp vanilla
1 egg lightly beaten
Streusel
� cup biscuit mix
� cup brown sugar
2 Tbls firm butter
1 tsp cinnamon
� cup chopped nuts

Combine first 9 ingredients.  Spread in a lightly greased crock pot.  Combine streusel ingredients  with a fork or pastry blender; sprinkle over the batter.  Cover and cook on high for about 2 � hours, until a toothpick inserted in the center comes out clean.  Uncover and let cool in the pot.  When cool enough to handle, loosen the sides and lift our carefully with a flexible spatula, or loosen sides and invert the pot slightly and remove with your hand (you could hold a small piece of foil or waxed paper).
