Here is my version of pinwheel sandwiches that make very attractive and tasty hors doerves (sp?) TORTILLA ROLL-UP APPETIZERS 3 OR 4 burrito-sized flour tortillas 8-ounce package cream cheese 3 thin slices of meat, such as ham, turkey, roast beef, cut into 1-inch wide strips A variety of other toppings, chosen for color and taste. Choose at least 2 green items and perhaps one item of each of the other colors: GREEN: Green onions, sliced thin Guacamole Marinated artichoke hearts, blotted dry and sliced Diced green chilies, blotted dry Pesto Capers Lettuce, sliced thin - use a colorful variety Fresh spinach, sliced thin RED: Roasted red bell peppers, seeded and sliced thin Pimentos (in a jar), blotted dry Tomatoes, seeds and juice squeezed out, sliced thin PURPLE: Purple onion, sliced very thin, can be marinated in rice vinegar Purple cabbage, sliced very thin BLACK: Black olives, sliced ASSEMBLE: Cut one edge off tortilla about 1 to 1 1/2 inches. Spread a thin layer of cream cheese over entire tortilla. Put a thin row of each of your selected ingredients parallel to the cut edge. The cut edge of the tortilla will be the edge where you start rolling, so put the messiest ingredients on or near this edge. Leave 1 inch of the opposite edge without added ingredients so the cream cheese can act as a "glue". Roll up tightly, starting at the cut edge. Slice into 1-inch slices and arrange on a serving platter. MEXICAN VARIATION: Substitute canned refried beans for the cream cheese. Add jalapeno slices (from jar), grated cheese, avocado, tomato, black olives, salsa. MIDEASTERN VARIATION: Substitute hummus for the cream cheese, add roasted eggplant made into a spread, pureed black olive spread, artichoke hearts, capers, feta cheese, black pepper, lettuce. |
