This is a combination of salsa recipes from Juanita Dun and Dioli Arellano.

SALSA WITH AVOCADO

3-4 large cloves garlic, peeled

5-7 stalks green onion, cut into thirds or so

A large handful of cilantro (use stems too) that if loosely put into a measuring cup, would probably be about a cup it's not specific, I know... but it's hard to measure this stuff! Just grab a large handful and add more if it seems to need it. It should look like you are putting a lot!

3 to 5 jalapeno peppers (depending on your tolerance for hotness & hotness of peppers)

1 large can peeled whole tomatoes (don't use stewed) (don't drain)

1 teaspoon salt

3 avocadoes, diced (optional but it's sooo good with avocadoes!)

Can chop it all by hand. Directions are for using a food processor:

1. Mince garlic cloves.

2. Add green onions and cilantro. Chop til medium fine.

3. By hand, finely dice the jalapenos, seeds too. Add to food processor. (If you really don't like hot things, start with two peppers and add more to taste.)

4. Add can of whole peeled tomatoes, including juice, and salt. Pulse til large pieces are chopped up.

5. Taste for hotness... it should be fairly hot, as it will "bland out" when the avocadoes are added. Add more diced jalapenos to your taste. On the average, I use three or four. I've used up to eight, which was killer hot.... sent the ladies at the baby shower running to the sink for water! If the peppers are very hot, I will use only two.

6. Peel and dice avocadoes, and place in serving bowl. Pour the salsa from the food processor bowl on top. Stir when ready to serve.

Serving Suggestions:

Besides eating with tortilla chips, can use in fajitas, with your eggs at breakfast, in breakfast burritos, with grilled meat, etc etc etc...

When camping: We wrap flour tortillas in foil with a sheet of moistened paper towel inside and heat over fire, turning frequently; wrap a foil packet of raw onions and green bell peppers with a spoon or so of water and heat up over fire; marinate meat (tri-tip steak, chicken, fish, shrimp... whatever) and grill. When all is done, we slice the meat thinly and make burritos by putting meat, bell peppers, onions, and salsa into a warm flour tortilla and rolling it up. Leftovers are great for breakfast with eggs (i.e., breakfast burritos).

Yum!
