Fix this side dish to go with any meat. It's very easy and oh-so-good. This is Ann Landers' recipe. The name of the recipe means you can't really mess this one up.


INFALLIBLE RICE

(Serves four hungry or six polite people)

1 med. onion, minced
2 tablespoons butter
1 cup long-grain raw white rice
2 cups chicken broth (hot)

Saute onion in butter until transparent. Combine onion, rice and hot broth. Bring to boil on top of range. Cover and place in 325 degree oven for 20 minutes. Serve and listen to the compliments.

NOTE: Please follow directions precisely. Substituting shortening for butter, leaving out the onion, failing to cover rice while baking, using water instead of broth, etc., etc, etc., will not yield infallible rice.

OK... those were Ann Landers' exact words. Here's where I cheat.... I dont heat up the broth first. I cook it with a lid on the stovetop on medium heat and turn very low when the water has evaporated. One thing I don't cheat on is using real butter... margarine isn't the same in this case. Hope you like it as much as we do.

P.S. - I just made this recipe for a dinner at the home of friends. I had used sweet purple onion which are in season and cooked it in their rice cooker. I didn't have canned chicken broth, so used chicken bouillon granules and water instead. The dish was described by a bro. as "awesome". I swear this is the easiest dish to get compliments for!
