I'm looking for ways to improve on this pasta recipe, but the flavor is wonderful as is. And it's super easy to make. Suggestions welcome.  Ruby made it once over 20 years ago and I never forgot it although I've never eaten it since until recently when I made it for a friend. My friend was afraid to try this dish because it had anchovies in it, but after one bite she loved it and had a big serving of it!

Here it is....


GARLIC ANCHOVY PASTA

This serves two people as a main (meatless) dish.

1/4 pound pasta such angel hair pasta, linguine, spaghetti (whatever you have)
3 tablespoons butter
1/4 cup olive oil
5 cloves garlic, minced
1 tin of anchovy fillets, drained of oil and minced
3/4 cup fresh Parmesan cheese (or however much you want)

Cook minced garlic in butter and olive oil on medium heat. I like the garlic cooked thoroughly but not browned, as it will get bitter. If cooked on slow heat, it will sweeten.

Add minced anchovies and stir. Add hot pasta and toss. Add Parmesan cheese, toss, and serve immediately.

NOTE: I think the next time I make it, I will add about 1/2 can of chicken broth just to make it moister.
