This is a great casserole to serve as a side dish or main dish. It's a favorite among friends, family and co-workers. Leftovers are really good heated up for breakfast. Very easy to make. : )

CHILE RELLENO CASSEROLE

1 c. half and half (milk works, too)
2 eggs
1/3 c. flour
3 (4 oz each) cans of whole green chiles
1/2 lb. monterey jack cheese, grated
1/2 lb. sharp cheddar cheese, grated
1 (8 oz) can tomato sauce

Beat milk with eggs and flour until smooth. Split open chiles, remove seeds, and blot dry on paper towels. Mix cheeses. Reserve 1/2 cup cheese for topping. Alternate layers of remaining cheese, chiles and egg mixture in an 8x8 casserole (larger pan works, too). Pour tomato sauce over top and sprinkle with reserved cheese.

Bake at 350 degrees for 1 hour 15 minutes or until cooked in center. (Less baking time if pan is larger than 8x8.)

Menu suggestions: Serve with fresh
spinach salad, tortillas, fruited gelatin.
