Jeannie Paiva recently asked me for the recipe for this dish that I used to make a long time ago and forgot about. It's so easy that you don't really need a recipe. 


CARROTS WITH BACON

Carrots, peeled and grated
Bacon
Salt and pepper to taste

Fry the bacon crispy and drain on paper towels. Crumble into bits and set aside. Pour out excess bacon drippings, leaving some to coat the pan. Cook the grated carrots in the bacon drippings. When the pan seems dry, add just enough water so it doesn't burn. When carrots are cooked, combine crumbled bacon with cooked carrots. Add salt and pepper to taste. Garnish with sprinkling of minced fresh or dried parsley (optional).

So easy and very good.
