Here is a grilling recipe that Jasmine made for us at Pine Mountain Lake.  It's very good.   Mmm... the basil aroma is yummy!!!


BASIL SHRIMP (Serves 4)

3 lbs shrimp, peeled and deveined
3 Tablespoons country-style prepared mustard
1/4 cup butter, melted
3 cloves garlic, minced
2-1/2 Tablespoons olive oil
1 bunch fresh basil, stems removed
juice of 1-1/2 lemons
salt
ground white pepper

1. In a shallow, nonporous dish or bowl, add olive oil to melted butter or margarine. Add lemon juice, mustard, basil, garlic, salt and pepper to taste. Mix all together. Add shrimp and toss to coat. Cove and refrigerate 1 hour.

2. Preheat grill to high heat.

3. Lightly oil grill grate. Remove shrimp from marinade and thread on skewers. Place skewers on heated grill and cook 2 minutes on each side.

My notes:  I think 3 lbs serves more than 4 people. When using wood skewers, soak in water before using.  Also, you throw away all those wonderful smelling fresh basil leaves.... wish they could be put to use somehow.
