Can you stand another carrot recipe?

Remember AJ Bump's restaurant in Freeport? They served steak, prime rib, etc., but their signature dish that they are still remembered for years after closing is this carrot casserole. I used to ask for an extra serving of it and would rather leave meat on my plate than these carrots. Although I haven't tried this recipe myself, I understand this is the "real thing".  


AJ BUMP'S CARROT CASSEROLE

3 cups carrots
10 soda crackers, crushed
2 tablespoons onions
2 tablespoons melted butter
1/2 teaspoon salt
1/8 teaspoon pepper
dash of celery salt
1/2 cup shredded cheddar cheese

Boil carrots in salted water until done. Drain, reserving 2/3 cup liquid. Mash carrots. Stir in crackers, onion, butter. Add reserved liquid. Bake at 450 degrees for 15 minutes.
