| Easy 2 Crust Pie 2/3 C plus 2 tbsp. shortening 2 C. all-purpose flour 1 tsp. salt 4 to 5 tbsp. cold water Cut shortening into flour and salt until particles are size of small peas. Sprinkle in water, 1 tbsp at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl. Divide pastry in half, gather into a ball; shape into flattened round on lightly floured surface. Roll pastry 2 inches larger than inverted pie plate. Fold pastry into quarters; unfold in pie plate and press to bottom and sides. For the top crust you can cut it in slices and weave the top, or you can cut out a shape so the pie can 'breath' while cooking. Bake at 350 until crust is lightly browned. To keep crust from burning, take strips of aluminum foil and cover edges. Fill your crust with canned pie filling *L we all gotta cheat sometime! |
