Vegetable Dum Biryani 


Preparation Time : 20 min.

Serves / Makes : serve hot 

Ingredients 
4cups;salt;ghee-2tables spoon;cloves;cardamom 2-3;cinnamom 1"piece;bay leaf 2-3 for decoration; onion-2(sliced & fried);cashnew nuts 1/2 cup;vegetables-(potatoes-2;carrots-2;peas-1 cup;french beans 10-12;cauliflower-1cup)(all vegetables cut into big pieces);red masala-patna red chillies 6-8;cashewnuts-1/2cup;ginger-1"piece;onions-2 big)(masala grind together);curd masala-(curd 1/2 cup;corriander leaves-1/4cup;mint leaves-1/4cup;garam masala-1tsp.;ghee- 4 table spoon.



Method 
clean;wash&dry the rice on a napkin.heat 2tbs. of ghee.fry onions &cashewnuts till golden brown.in the same ghee add cloves cardamom;cinnamom;bay leaf.add dried rice.fry for min..add 4 cups of hot water & salt.cook on a slow fire till it is cooked.keep in the slow oven for 10 min..in acooker add 4 tbs.of ghee; red masala&2 cup of water little by little.when masala is well fried;add all the vegetables.fry for 5 min..add curd masala;salt& 1 cup of water.give 1 whistle &close the gas.mix together rice & vegetable gravy.arrange in a bowl.decorate with onion cashew nut & coriender leaves.put finely chopped mint lezves on top cover with foil&put in the oven for 10 to 15 min. for dum.

Shahi Pulao 


Preparation Time : 20 min.
Cooking Time : 20 min.
Serves / Makes : 5. 

Ingredients 
3 cups rice
2 potatoes
1 carrot
1 cup coriander leaves
4 green chillies
1/2 tsp. jeera
1 cup grated coconut
1/2 cup ghee
2 flakes of garlic
1/2 inch ginger
salt per taste 

Method 
1. Wash the rice & strain the water. cut all the vegetables. 
2. Grind coriander leaves, coconut, garlic & ginger. Put ghee in a kadai. put Jeera & grinded masala and fry a little. 
3. Put the washed rice & fry for some time. Add the vegetables. Add double quantity of boiled water to the rice. Add salt per taste. let it cook. 
4. Decorate with fresh grated coconut & coriander leaves. Enjoy.
