HOT GERMAN POTATO SALAD 4 1/2 lbs potatoes 12 slices bacon 1 1/2 cups chopped onion 3/4 cup chopped celery 3 tablespoons flour 1 tablespoon plus 1 teaspoon 1 1/2 cups water 1-cup cider vinegar 1-cup sugar Pare potatoes. Heat 1- inch salted water (1/2 teaspoon salt and 1 cup water) to boil. Add potatoes and simmer 30 to 35 minutes. Drain. Fry bacon until crisp. Cook onion and celery, stir in flour and salt. Cook over low heat until bubbly. Remove from heat, stir in water and vinegar. Heat to boiling, boil for 1 minute. Heat oven to 350 degrees. Cut potatoes into thin slices. Turn potatoes and bacon mixture into ungreased 3-1/2 quart casserole, toss and cover. Bake 30 minutes or may be placed in crock pot for several hours. Add ham for main dish meal.
