Zesty Carrot Salad with Garlic and Cilantro
5 young carrots, peeled and coarsely grated
1/4 cup freshly squeezed lemon juice
1 clove garlic, finely minced
1 tablespoon finely minced fresh cilantro
1 tablespoon vegetable oil (optional)
salt and freshly ground black pepper, to taste

Combine all the ingredients in a serving bowl. Serve at once.
