Black Bean Soup
4 cans black beans (drain all except 1 can)
3/4 can chicken broth
Orange juice (1/4 cup or so)-I'd probably add more of this next time
Juice of 1 lime
1 red onion
1 red pepper (or other pepper of choice)
2 cloves garlic (or more, if you're like me and love it)
Black pepper and salt to taste
1-2 teaspoonfuls chili powder
1/2-1 teaspoonful cumin
1 teaspoonful thyme
Limes, sour cream, cilantro as toppings

Saut� onions, garlic, and peppers in olive oil or butter for 3-5 minutes.
Add beans, chicken broth, OJ, and lime juice. Add seasonings to taste, and bring to a boil. If you want a thicker consistency (I did), you can dissolve some corn starch in water and stir into the pot (bring back to a boil for full thickening power). Simmer for 30-40 minutes and serve with toppings.
(serving with Beano or Gas-X optional).
