The Freshman: Buffy and the gang, now at Sunnydale University, encounter a gang of hippy vampires who bite new students, steal their things and generally behave in a pretty anti-social manner. However, trying this trick on Buffy predictably doesn't go down well, and they end up as dust.
Living Conditions: Buffy's annoying roommate, Kathy, gets on Buffy's nerves once too often, leading everyone's favourite Slayer to conclude that Kathy is a demon. This turns out to be entirely accurate, and after disposing of Kathy, Buffy invites Willow to be her new roommate.
The Harsh Light of Day: Spike comes back to Sunnydale in search of a ring that will let him resist all traditional vampire-killing things eg. stakes, sunlight and crosses. He actually finds it, but then goes and attacks Buffy, who pulls it off him, and sends it as a present to Angel in LA.
Fear Itself: At a Halloween party, a Fear Demon starts frightening everybody in order to raise energy for it to rise. When it finally does appear, it turns out to be only three or four centimetres tall, and is thus fairly easily defeated.
Beer Bad: An evil bartender poisons all the beer in the bar with a potion that makes those who drink it devolve into Stone Age individuals. Buffy is among those afflicted, but the potion wears off of its own accord, making for a pretty pointless but nonetheless amusing episode.
Wild at Heart: Oz meets another werewolf, but this one has not been tamed by having Willow as a girlfriend for a couple of years. In fact, she is a pretty nasty piece of work, and Oz kills her, then decides to leave because things didn't exactly work out with Willow.
The Initiative: Spike is captured by the Initiative, a mysterious underground organisation beneath Sunnydale University, a member of which is the man shaping up to be Buffy's new boyfriend, Riley. The Initiative puts an implant in Spike's head, which makes it impossible for Spike to bite any humans.
Pangs: Angel comes back to Sunnydale to see Buffy, but instead spends the whole episode avoiding her, but nevertheless helping to protect her from a bunch of phantom Red Indians who seem intent on killing the Scooby gang.
Something Blue: Grieving over Oz's departure, Willow casts a spell intended to make her forget her heartache. Unfortunately, it goes wrong and Giles goes blind, Xander becomes a magnet for demons and Buffy and Spike prepare to get married. The spell is reversed pretty smartish.
Hush: The first episode of Buffy I ever saw, probably the best as well. Some intruiging baddies called the Gentlemen make the entire population of Sunnydale lose their voice, and of course they can only be defeated by a very loud scream. Very clever, I thought.
Doomed: While Buffy and Riley try to cope with having learnt each others' true identities (in 'Hush' they discovered that one was the Slayer and the other was in the Initiative), a bunch of demons try to reopen the Hellmouth. Spike discovers that he can kill baddies, and consequently goes on a bit of a killing spree of his former friends.
A New Man: Giles' old friend from Halloween and The Dark Age pops up again and turns Giles into a demon. Buffy nearly kills him, but fortunately she realises it's him, and doesn't. Meanwhile, the Scooby gang decides that Spike is harmless and let him go.
The I in Team: Riley introduces Buffy to the Initiative, and its commander, Professor Walsh, makes Buffy an honorary member. However, after Buffy makes reference to knowing a little bit about "314" - Walsh's secret project to create a Frankenstein-like monster called Adam, for whatever reasons we don't know yet - Walsh decides Buffy is a danger and tries to get her killed. Buffy exposes this plan by surviving and spilling the beans. Riley quits the Initiative, or tries to. Buffy doesn't yet know any more about "314" than the number, though. As the episode ends, Walsh is killed by Adam.
Goodbye Iowa: Riley starts going totally crazy because Professor Walsh is no longer around to give him drugs. Buffy guides him through his withdrawal symptoms with tender loving care (ahhh). Meanwhile, Adam goes on the rampage, and by episode's end has introduced himself to Buffy and Riley. As well as this, Willow has been for the last few episodes casting ever more elaborate spells with her new friend Tara. There is a strong lesbian subtext between the two of them. It'll get stronger, believe me.
This Year's Girl (Part 1 of 2): Faith wakes from her coma which Buffy put her in in Graduation Day Part 2, and comes after Buffy with a special device the Mayour left for her, which allows her to switch bodies with Buffy. Gasp!
Who Are You (Part 2 of 2): Buffy, in Faith's body, is captured by the Watcher's Council, but fortunately breaks out before they can get her back to England. Meanwhile, Faith plays at being Buffy for a while, before Buffy comes and beats her up, then swaps bodies back again, which was probably a bad order to do things in, considering when she got back in her own body, she'd be aching rather a lot.
Superstar: The former high school nerd Jonathan is now a superhero, and no one in Sunnydale realises he hasn't always been this way. Buffy starts to suspect that things are not quite right, and eventually has everybody else reverse Jonathan's spell and take things back to how they were.
Where The Wild Things Are: At a fraternity party, Riley and Buffy's incessant sexual activity fuels the appearance of ghosts that start haunting the party. Things take a turn for the worst when Willow, Xander, Anya and Tara run to Giles for help and find him crooning along to a guitar song. But they embarrass him enough to stop and actually help, so it's okay.
New Moon Rising: Oz pops along again to try and get Willow to be his girlfriend again - unfortunately, though, Willow has realised that she is in love with Tara. When Oz turns into a werewolf again, he is captured by the Initiative, and Riley busts him out, then having to go on the run from his Initiative friends.
The Yoko Factor (Part 1 of 2): Angel comes to Sunnydale, ostensibly not with the intention of beating hell out of Riley, but he does that anyway. Spike has teamed up with Adam, who has promised to remove the chip from his head. Spike spreads discord between Buffy, Willow, Giles and Xander so they aren't friends anymore! Meanwhile, Riley is kidnapped by Adam.
Primeval (Part 2 of 2): Adam puts Riley in a chair where he stays for most of the episode, until Buffy, Willow, Giles and Xander, who have all made friends again, come and bust him out. Then Buffy goes to kill Adam, which she does with the help of Riley, and also Willow, Giles and Xander, who through the use of Willow's magic, possess Buffy and help her kill Adam. Spike goes home to his crypt, claiming "he would have gotten away with it if it weren't for those danged kids". (Not really. I made that up.)
Restless: A very surreal episode which focuses on Buffy, Xander, Giles and Willow's dreams. They all have nightmares, and Buffy eventually finds out that it is the first Slayer who is trying to kill them through their dreams. But it's all right because Buffy kills her.
