Banana-Nut Waffles ------------------ Yields: about 8-10 Belgian waffle squares Grease and preheat waffle iron 1 c. all-purpose flour 1/2 c. whole-wheat flour 1/4 c. sugar 1 T. baking powder 1/2 t. salt 1 t. cinnamon 2 small, overripe bananas, cut into chunks 2 large eggs 1/2 c. plain yogurt 2 t. vanilla 1/2 c. skim milk 1/4 c. vegetable oil 1/2 to 3/4 c. finely chopped walnuts or pecans In large bowl of food processor, combine flours, sugar, baking powder, salt, and cinnamon. Add bananas, eggs, yogurt, vanilla, milk, and vegetable oil; pulse several times to blend thoroughly. Add nuts and pulse 2-3 times to mix (batter may be lumpy, which is all right). Using an ice cream scoop, place batter in waffle iron. Close waffle iron and cook 3-4 minutes, or until steam escaping from sides is reduced (indicates batter has completed cooking through). Open iron carefully. If it sticks and resists opening, allow the waffles to continue cooking for another minute. Remove waffles gently with fork and serve immediately. Repeat for remaining batter.
