RICE DISHES

Du Riz-�-Pois Coll�s


Note: In this recipe, the rice is cooked in the water that was previously used to cook the beans. This gives the rice a very nice color and a lot of taste. Du Riz-�-Pois Coll�s is usually a side dish during the main course of a dinner.

two cups of long grain rice
one cup of red kidney beans
a finely chopped onion
one chopped hot green pepper one ounce of salt pork cut into small cubes
one tablespoon of butter
two tablespoons of vegetable oil
salt

Cook the beans in 4 cups of water for 2 hours or until tender. Drain the beans but keep the water which will be used to cook the rice. Fry the salt pork until crisp, then add the chopped onion, shallots and green pepper. When the onion is tender, add the beans and season to taste. Add the water used to cook the beans, bring to a boil, add the rice and cook for 20 minutes.


Du Riz-�-Djon-Djon


two cups of long grain rice
one cup of Haitian black mushrooms (dried)
two finely chopped cloves of garlic
four tablespoons of butter
salt
pepper
thyme

Remove the stems from the mushrooms and soak them in a cup of hot water for 30 minutes. Soak the heads in a separate cup of hot water. Saut� the rice and garlic in butter then add all other ingredients including the water used to soak the mushrooms (discard the mushroom stems which are not edible). Cook for 20 minutes.
