Sicilian food is a mixture of Greek, Roman and Arab cuisines. Fish is a popular ingredient, especially in the coastal towns.

Pasta con le sarde is a meal often found on the island and one that the immigrant Sicilians brought to their new  homes in America. My second generation Sicilian parents delighted in this dish.

I painted a similiar image of this recipe for my first apartment, although I never cooked the dish. I   wanted to bring a little bit of my Sicilian  heritage  into my kitchen.

My  non Italian husband orders this
primo piate when we are in Sicily.
Arancini are balls of rice containing a small stuffing of whatever you like. I use chopped turkey meat, parsley, a small mount of mozzarella cheese and peas in a light tomato sauce. Other ingredients can be chopped mushrooms or ham.
I found these can be easy to make  with a deep fryer. The trick to keeping them from falling apart is to dip the rice ball in flour before the eggwash, and breadcrumbs coating.
