UTENSILS
INGREDIENTS
100g/4oz caster sugar
100g/4oz soft margarine
2 eggs
100g/4oz self raising flour
5ml/1tsp baking powder
30ml/2tbsp milk
30-45 ml/2-3 tbsp syrup/treacle
METHOD
1. Cream the sugar and margarine until light and fluffy. Beat in the eggs and fold in the flour and baking powder. Gently mix in the milk.
2. Spoon the syrup/treacle into a greased 1 litre/2 pint pudding basin and place the pudding mixture on the top. Smooth the surface and loosely cover the dish with cling film.
3. Heat on high power for 5 1/2 minutes. Then leave to stand for a further five minutes.
4. Serve with custard, cream or a fruit sauce.
