Banana and Apricot Loaf

UTENSILS
INGREDIENTS
2 medium size eggs
200g dark brown soft sugar
125ml sunflower oil
2 large bananas, peeled and mashed
50g ready to eat apricots, snipped
50g JS high fibre bran
300g plain flour/all purpose
2 x 5ml spoons baking powder
� x 5ml spoon salt
6 x 15ml spoons milk
METHOD
Preheat the oven to 190�C, 375�F, Gas Mark 5. Grease and line a 1kg loaf tin.
Cream the eggs and sugar, add the oil, bananas, apricots and bran then stir to combine.
Sieve the flour, baking powder and salt and fold into the mixture with a metal spoon, adding the milk to produce a dropping consistency.
Pour into the prepared tin and bake in the oven for 1 hour. Test with a skewer, if it comes out clean the loaf is cooked.
Turn out on to a rack to cool.
