INGREDIENTS

2 medium size eggs
200g dark brown soft sugar
125ml sunflower oil
2 large bananas, peeled and mashed
50g ready to eat apricots, snipped
50g JS high fibre bran
300g plain flour/all purpose
2 x 5ml spoons baking powder
� x 5ml spoon salt
| 6 x 15ml spoons milk

| | METHOD

| | Preheat the oven to 190�C, 375�F, Gas Mark 5. Grease and line a 1kg loaf tin.
|
|
| | Cream the eggs and sugar, add the oil, bananas, apricots and bran then stir to combine.
|
|
| | Sieve the flour, baking powder and salt and fold into the mixture with a metal spoon, adding the milk to produce a dropping consistency.
|
|
| | Pour into the prepared tin and bake in the oven for 1 hour. Test with a skewer, if it comes out clean the loaf is cooked.
|
|
| | Turn out on to a rack to cool.
