Ingredients:

1 pound Mochiko (glutinous rice flour)
2 1/2 cups white sugar
1 tsp baking powder
2 cups water
1 tsp vanilla extract
1 can (14 ounce) Coconut Milk
1/4 tsp red food coloring
1 1/2 cups potato starch (or corn starch)

Instructions:

1. preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 inch pan, whisk together the flour, sugar and baking powder.
2. in another bowl mix the water, vanilla extract, coconut milk and food coloring, then mix together with  the flour mixture and pour into pan.
3. cover pan with foil and bake for about 1 hr. (depending on amount poured into the pan, the lesser the volume, the less time it needs to bake..o_O) Let it cool completely.
4. turn the pan of mochi onto a surface dusted with the potato starch then cut into bite sized pieces. (I say use a pair of scissors to cut them into pieces.. ^__^0 it works much better than a knife!)

um...this isnt my own recipe...i forgot where i found it.. ^__^0 just saying this to give credit to the person this recipie belongs too..haha oh...and i really like this...its so soft and chewy and yummy!! its a must try one!! HAHA
