IMPOSSIBLE GREEK SPINACH PIE

          1 (10 oz.) pkg. frozen spinach, thawed and drained
          1/2 c. chopped onion
          1 c. shredded Swiss cheese (4 oz.)
          1 1/4 c. milk
          3/4 c. buttermilk baking mix
          3 eggs
          1 tsp. salt
          1/4 tsp. pepper
          1/4 tsp. ground nutmeg

          Grease pie plate (10 x 1 1/2 inches). Mix spinach, onion and cheese in plate. Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 minute with hand beater.

          Pour into plate. Bake until knife inserted in center comes out clean, about 30 minutes. Cool 5 minutes. Garnish as desired.

          Heat oven (400 degrees). Refrigerate remaining pie. Makes 6 servings.
