
These make great BIG cookies:)3/4 cup Butter
1 cup Vegetable Shortening (Crisco Butter Flavor)
2 cup Brown Sugar
2 cup Granulated Sugar
4 large Eggs
6 tsp Vanilla Extract
4 cup All-Purpose Flour
2 tsp Baking Soda
2 tsp Baking Powder
2 cup Oats
2 cup Corn Flakes Cereal (uncrushed)
2-3 cup Chips (12-18 oz.) [1 Cup White Chips/1 Cup Milk Chocolate]
1 cup Coconut (optional)
1 cup Pecans or Walnuts (coarsely chopped)Mix together flour, baking soda, and baking powder in a bowl and set aside. Melt butter and shortening in a microwave oven until very soft. Cream in brown sugar, granulated sugar, eggs, and vanilla. Add flour mixture to creamed mixture 1/2 cup at a time. Mix in oats, cereal, chocolate chips, coconut (if desired), and nuts one at a time. Drop ice-cream scooper sized dough onto cookie sheet lined with waxed paper*. Bake in preheated 350-375�F oven for 12-15 minutes.
* Waxed Paper. You can bake on waxed paper. Just don't let the paper fall too far over the sides of the sheet. (See note in "Making the Perfect Chocolate Chip Cookie under Cookie Sheets")
VARIATIONS:
COW CHIPS
Prepare as above.BUFFALO CHIPS
Substitute 2 cups of semi-sweet chocolate chips for the 1 cup of white chips & 1 cup milk chocolate chips.
SHEEP CHIPS
Substitute 2 cups Rice Krispies for Corn Flakes. Substitute 1 cup of white chips & 1 cup milk chocolate chips for the 2 cups of semi-sweet chocolate chips.
BLACK SHEEP CHIPS
Make Sheep Chips as above but add 1/2 cup Cocoa Powder to the flour. Bake as usual.
REINDEER CHIPS
Substitute Mint Chocolate Chips (available around the Christmas season) for 2 cups of semi-sweet chocolate chips. Add 1 cup (6-8 oz.) candied cherries.
RUDOLPH THE RED NOSED REINDEER CHIP
Made Reindeer Chips like above but put 1/2 of a dried Maraschino cherry on top 2 minutes before baking complete.
MOOSE CHIPS
Add 1/2 cup Cocoa powder to the flour, substitute 10 oz. peanut butter chips for 12 oz. of semi-sweet chocolate chips. NOTE: REINDEER & MOOSE have droppings that more resemble plums than cow chips. Roll the dough into a ball. NOTE: Some might think it crude to call these "Cow Chip" cookies in reference to processed cow food... but consider, these are "drop" cookies
