The ingredients you need are super simple! You need 1L of water (~4cups), one bag of Polenta flour (300g-500g), olive oil, and salt.
First, youre going to put the water in a pot to boil (preferably a deep cast iron one). Before the water begins to boil, add salt to taste, and add olive oil as well. You can even sprinke a tablespoon of polenta flour in the water before letting it boil.
Once the water starts to boil, add the rest of the polenta flour little by little, stirring it in with a wooden spook or a metal whisk. Mix every 2-3 minutes for a total of 15-20 minutes.
Once you get to your desired consistency (either runny and more pridge-like or thick and more moldable) add in two tablespoons of butter (not melted).
It's suggested you place the mamaliga on a cutting board if it's on the thicker side. When cutting it, use string to do so! Once a slice is grabbed, you may add telemea (romanian cheese) to it, and mold it into a ball. This dish is also often served with fried fish, scrambled eggs, and a side of sourcream!
