Maui Sweet Potato Bake

YO and I were invited to a luau a few weeks ago and we were assigned to bring a Hawaiin sidedish for the party. I scoured the internet for something easy and cheap and found this awesome recipe!


4 lbs cooked sweet potatoes (about 5 large ones, skinned)
1 14 ounce can of coconut milk
1 1/2 teaspons salt
1 1/2 teaspoons white pepper
1/2 cup crushed pineapple, well drained
1/2 cup fresh parsley
1 finely grated lime peel
1 dash hot sauce
1/2 cup shredded coconut

Mash the potatoes in a large bowl until almost smooth. Stir in the coconut milk and seasonings and mash until smooth. Stir in the pineapple, parsly, lime peel and coconut. Turn into a greased 9 x 13 inch baking dish. Spread evenly. Sprinkle coconut over the top. Bake in the center of a preheated 350F oven for 30-35 minutes. Broil until the top is golden, about 3 minutes.

Great with Ham!
