Stuffed Whole Trout


Stuffing:
1/3 Cup chopped celery
2 Green onions, chopped
1/4 Cup chopped green pepper
2 Tablespoons butter
1/2 Cup italian seasoned bread crumbs

Sauce:
1 Tablespoon butter
2 Teaspoons lemon juice

2 Whole Fresh Trout (6 - 8 oz)

In baking dish, combine celery, onion, green pepper and 2 tablespoons butter. Cover, microwave high (100%) 2-3 minutes or until vegetables are tender. Stir in bread crumbs. Stuff trout. If necessary, secure with toothpicks. Place in 9 x 13 inch baking dish. In small dish, melt 1 tablespoon butter high 15-30 seconds. Mix in lemon juice. Brush trout with lemon-butter. Cover dish with plastic wrap. Microwave high (100%) 6 - 8 minutes, or until fish flakes easily.

Makes 2 servings.
