Grilled Whitefish


5 to 6 Pounds whitefish
Salt and pepper
6 Tablespoons melted butter + 2 Tablespoons olive oil
1 Lemon - thinly sliced
1 Onion - sliced

Place lemon and onion slices inside fish. Brush fish generously with butter and grill 10 minutes per inch of thickness. Remember, that grilling is the oposit ofbroiling and the fish must be basted frequently. Grilling is a dry heat method from bottom up rather than the top down. Turn several times and baste to prevent fish from drying out.
