White Fudge


2 1/2 Cups granulated sugar
1/4 Cups milk
1 Tablespoon light corn syrup
2 Teaspoon vanilla
1/2 Cup dairy sour cream
2 Tablespoon butter
1 Cup coarsely chopped nuts (optional) (english walnuts, pecans, etc.)
1/4 Teaspoon salt

Stir over moderate heat until sugar is dissolved and mixture reaches a boil. Boil over moderate heat 9 to 10 minutes, to a soft ball stage. Remove from heat and allow to stand until lukewarm, (about 1 hour) add vanilla and beat until mixture just begins to lose its gloss and holds its shape. Stir walnuts in quickly and pour into a buttered pan. Let stand until firm. If weather is damp, cook to 240.
