Full-Of-Granola Muffins


1 3/4 Cups all-purpose flour
1/4 Cup packed brown sugar
2 Teaspoons baking powder
1/2 Teaspoon salt
1 Beaten egg
3/4 Cup milk
1/3 Cup cooking oil
1 Cup Apricot & Nut Granola (see recipe in Appetizers & Snacks section)

In large mixing pitcher, combine flour, brown sugar, baking powder, and salt. Make a well in center. Combine egg, milk, and oil; add all at once to flour mixture. Stir just till slightly moistened (batter should be lumpy). Stir in granola; do not overmix. Grease muffin cups or line with paper bake cups; fill 2/3 full. Bake in 400 degree oven about 20 minutes or till golden.

Serve warm. Makes 12 muffins.
