     Zucchini Carrot Bread

1-3/4 c. sugar
2/3 c. shortening
3 c. shredded zucchini (2 med.)
1 lrge. carrot, shredded
2/3 c. water
4 eggs
3-1/3 c. flour
1/3 c. oatmeal
2 tbsp. baking powder
1-1/2 tsp. salt
1 tbsp. cinnamon
1/2 tsp. allspice
2 tbsp. vanilla or orange zest
1/2 tbsp. baking soda
1/3 c. chopped walnuts
~Stir eggs & sugar.
~Add shortening, mix well.
~Add rest of ingredients, mix.
~Pour into 2 greased loaf pans.
~Bake 1 hr. 10 mins. in 350 oven.
