Skillet      Cornbread
1/4 c. flour
  1/4 c. cornmeal
  1/2 tsp. baking powder
  1/4 tsp. salt
~Mix well.

~In another bowl mix well:
  1 egg
  1/4 c. milk
  3 tsp. oil

~Add  to the flour mixture.  Mixing just
  'til moist.
~Heat 1 T. oil in a 10" skillet.
~Pour bread into skillet, cover.
~Cook  4-5 mins.
~Turn over & cook 4 mins. 'til brown.

This cornbread holds together very well.
Serve with taco casserole or any other
southwest recipe for a great meal.
