Potato Pancakes
5 med. potatoes
1 med. onion, shredded
1 beaten egg
2 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper, may use white pepper
cooking oil

~Shred potatoes with grater, small holes.

~Shred onion with large holes.

~Drain both in colander, pressing out as much liquid as possible.
~Stir all ingredients together.
~Drop by tbsps. onto oiled pan.
~Fry on each side 2-4 mins.
