Pineapple Whipped Cream Salad

~Drain:  1 can crushed pineapple    19-20 oz.

~Add enough water to pineapple juice to make 1-1/2 c.   juice.

~Heat to boil.      Add:   1 pkg. (small)  lemon jello  ~Stir to dissolve.
                         Add:  1/2 c. sugar
                                   1/4 tsp. salt
                                   2 tbsps. lemon juice
~Chill  partially. 
~In the meantime  whip  1/2 pt.  whipping cream 'til stiff.
~When jello is ready:  
                         
                         Add:    crushed pineapple
                                    1 c. finely grated carrots
                        
             Fold into jello:    whipped cream

~Stir to mix well.

~Pour into 8" jello mold.
