| Jumbo Raisin Cookies |
| 2 c. raisins 1 c. boiling water ~Combine in saucepan and boil 5 mins. ~Let cool. 1 c. shortening 2 c. sugar ~Cream together. 3 eggs ~Add to creamed mixture one at a time and beat well. ~Blend in cooled raisins mixture and 1 tsp. vanilla 4 c. flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1-1/2 tsp. cinnamon 1/2 tsp. nutmeg 1/4 tsp. allspice 1 c. chopped nuts ~Stir into dry ingredients. ~Mix well. ~Add to creamed mixture. ~Stir well. ~Drop by tbsps. onto greased cookie sheet. ~Bake 12-15 mins. in 350 oven. Makes 7 dozen. They freeze well. |
