RECIPE OF THE MONTH~FEB
GINGERBREAD CAKE
2-1/4 c. flour
1 tsp. ginger
1-1/2 tsp. cinnamon
1 tsp. soda
1/2 tsp. salt
1/2 tsp. baking powder
~Mix well.

~Add:
1/2 c. vegetable oil
1/3 c. sugar
2 eggs, unbeaten
3/4 c. milk  (sweet or sour)
1 c. molasses

~Beat altogether about 1-1/2 mins.
~Pour into 9X13 pan.  Bake about 40-50 mins. in 350 oven.
Or  9" round or square pans.
~Bake about 30-35 mins in 350 oven.
Valentine's month
~Pour apple sauce or lemon sauce over each serving.

Serve warm!

This recipe calls for 1 whole cup of molasses~~
mmmmmmmmmmmm!!!!!
Lemon Sauce
3 tbsp. cornstarch
1/2 c. sugar
1-3/4 c. water
1 tbsp. lemon peel (finely grated)
3-1/2 tbsp. lemon juice
2 tbsp. butter
1/4 tsp. salt

~Combine corstarch, sugar & lemon peel in saucepan.

~Slowly add water while stirring.

~Let boil & thicken.

~Remove from heat.
~Add butter, lemon juice & salt.
~Mix well.

Serve warm over warm gingerbread cake.
