Best Zucchini Cake
3-4 c. grated zucchini~add last.        3 c. flour
1-1/2--2 c. sugar                             2tsp. baking powder
1 c. cooking oil                               1 tsp. soda
4 eggs                                            1-1/2 tsp. salt
2 tsp. cinnamon
1-1/2 tsp. nutmeg                       1 c. chopped walnuts or pecans
                                                           or mixed                                  

~Mix sugar, oil and eggs in a large bowl.  ~Beat well.
~Blend dry ingredients.
~Stir into egg and sugar mixture. Mix.
~Add: nuts.  ~Mix well.
~Pour into greased angelfood tube pan.
~Bake for 1-1/2 hrs. in 350 oven.
~Test with toothpick for doneness.

~Let cool in pan on wire rack for 10 min.
~Remove cake from pan and let cool.

~Run sharp knife around outside and center of tube pan for easy          removal. 
~This is a large cake.  It freezes well.  I cut cake in half to freeze

~The longer it sits--the better it gets!
