| SCALLOPED CHICKEN CORDON BLEU | |||||||||||||||||||
| 2 med/large potatoes, sliced 1 can cream of mushroom or cream of chicken soup 2 Tbs butter 1 & 1/2 can milk 1/4 c. shredded cooked chicken buttered crumbs (crushed dry stuffing mix, bread crumbs) ham slices (or turkey ham slices) Cheese slices (I use medium cheddar) Put butter in bottom of casserole dish. Layer in potatoes, chicken, & ham slices. Spread soup on top. Pour in milk. Top with stuffing mix/croutons/bread crumbs. Cover & bake 45 minutes. Uncover. Top with cheese & melt. Cool for 15 minutes before serving. |

| DIANA'S FINGER STEAKS | |||||||||||||||||||
| 1/4 cup flour 1/8 tsp. oregano or italian seasoning 1/8 tsp chili powder 1/8 tsp. garlic powder 1/8 tsp. onion powder 1/8 tsp. black pepper Cut up steak into long thin pieces. Marinade steak for 8 hours (or all day) in Diana's Italian Dressing (below) or store-bought Italian Dressing. Put flour & spices in zip-lock (or paper) bag & shake steak in flour mixture to coat. Deep-fry in hot oil until crispy on the outside. |

| DIANA'S ITALIAN DRESSING | |||||||||||||||||||
| 1/3 cup salad oil 1/8 cup vinegar 1/8 tsp chili powder 1/8 tsp. garlic powder 1/8 tsp. onion powder 1/8 tsp. black pepper dash of Mrs. Dash few drops hot salsa Combine ingredients in jar & shake well. Chill. Shake before serving. For a steak marinade, substitute 3 Tbs. vinegar & some white wine for 1/8 cup vinegar if desired. Marinate 2 to 8 hours. |
