COOKIES

Haystacks (no-bake cookies)
1 cup brown sugar
Almost 1 cup white sugar
1 cube (1/2 cup) margarine
1/2 cup milk
1/4 tsp. vanilla
1/2 cup coconut
1/2 cup peanut butter
pinch salt
3 cups oatmeal
Melt margarine & sugars. Add milk & vanilla and mix. Mix in rest of ingredients and cook about 3 minutes, stirring constantly. Drop by teaspoons onto waxed paper on a cookie sheet. Cool & ENJOY.
For Chocolate Haystacks, use white sugar instead of brown sugar, and add 4 Tbs. cocoa.
Ragkakar (Swiss Cookies)
1/2 cup butter or margarine
1/3 cup sugar
1/2 cup flour
1/2 cup whole wheat flour
1/2 cup rye flour
1/4 tsp. baking powder
1/4 tsp. salt
3 Tbs. cold water
Cream together butter and sugar until fluffy. Stir in flours, baking powder, and salt. Add water until just moistened. Roll dough 1/8 inch thick. Cut 2&1/2 inch rounds with 1/2 inch hole in center (use doughnut cutter). Bake at 375 F. for 10-12 minutes.
Filled Cookies
1 1/2 cup sugar
1 cup shortning
2 eggs
1 cup buttermilk (or 1 cup milk with 1 tsp. lemon juice added)
1 tsp vanilla
1 tsp lemon extract
3 cups flour
1 tsp. salt
1 tsp. baking soda
2 tsp. baking powder
Cream together shortning & sugar. Add eggs, milk, and flavorings. Fold in dry ingredients. Chill well. Roll out 1/8 inch thick. Cut in 2 1/2 inch circles. Top with fruit filling or jelly. Fold over. Seal edge by folding over edge & pressing along edge with fork. Bake 375F for 10-15 minutes.
Fruit filling for filled cookies: 1/2 lb. raisins, 1/2 lb. figs, 1/2 lb. pitted dates, 1/2 cup water. Grind fruits & cook in water 15 minutes.
Pinwheel Cookies
FUN FOR KIDS!
1 cup margarine
1 cup sugar
1 egg, beaten
1 tsp. vanilla
1/4 tsp. baking powder
1/2 tsp. baking soda
3 Tbs. baking cocoa
flour
Cream together margarine & sugar. Add egg & vanilla, baking powder, baking soda. Mix. Mix in enough flour to make stiff dough. Add cocoa to half of dough. Chill. Roll out one vanilla dough into rectangle 1/8 inch thick. Roll out chocolate dough and put on top of vanilla dough. Starting at one edge, roll up dough lengthwise. Cut 1/2 inch thick slices. Bake 350F 10-12 minutes.
