Tex-Mex Lasagna

Ingredients:

  • 1 lb. ground beef
  • 1 can (16 oz. diced tomatoes, undrained)
  • 1 pkg. taco seasoning
  • 1 can (2.8 oz.) french fried onions
  • 1 1/2 cups (12 oz.) cream-style cottage cheese
  • 2 cups (8 oz.) shredded cheddar cheese
  • 2 eggs, slightly beaten
  • 12 (6-inch) flour tortillas (or corn)
  • 1 medium tomato, chopped
  • 1 cup shredded lettuce

Instructions:

Preheat oven to 350 degrees. In large skillet, brown ground beef; drain. Stir in canned tomatoes and taco seasoning. Reduce heat and simmer, uncovered 5 minutes. Remove from heat and stir in 1/2 can french fried onions. In medium bowl, combine cottage cheese, one cup cheddar cheese, and the eggs; set aside. Overlap (or cut up and lay on bottom) 3 tortillas in bottom of greased 8x12 inch baking dish. Spoon beef mixture evenly over tortillas, top with remaining 3 tortillas. Spoon cheese mixture on top of beef and tortillas. Bake, covered at 350 degrees, for 45 minutes or until cheese mixture is set. Top with remaining cheddar cheese. Sprinkle remaining onions down the center of the casserole. Bake, uncovered, 5 minutes or until onions are golden brown. Just before serving, arrange tomato and lettuce around edges of casserole. Let stand 5 minutes before serving. Makes 6 servings. Can also top with salsa, sour cream, etc. Very good!

French Bread Pizza

Ingredients:

  • 1 lb. hamburger, browned and drained
  • 1 pk. frozen chopped green peppers and onions
  • garlic to taste
  • 1 can pizza sauce
  • whatever toppings you would like: (i.e., pepperoni, etc.)

Instructions:

Simmer meat mixture (first four ingredients) for 10 minutes. Cut a loaf of French bread in half lengthwise. Place each half on a cookie sheet lined with tin foil (for easy clean-up). Spoon the meat mixture evenly across both pieces. Add extra toppings. Bake at 375 for about 20 minutes, adding cheese to the top after about 10 minutes.

Slice in 1 1/2 inch strips and serve. My mom used to make this for my youth group and they all LOVED it.

Chicken Catalina

Ingredients:

  • 1 (4-5 pc.) pkg. boneless, skinless chicken breasts (or your fav. pieces)
  • 1 lg. bottle Catalina dressing
  • 1 pkg. Onion soup mix (the dry one)
  • 1 8-10 oz. jar preserves or jam (apricot, peach, strawberry)

Instructions:

Place chicken in greased 9x13 in. pan. Mix the last three ingredients and pour over the chicken. Bake uncovered for 1 hr 15 min. at 350 degrees. This is a sweet/salty dish and very pretty! I love to use the chicken breasts and make this for company. It makes for a neat way to eat chicken and it looks like it took a while to prepare. If you use the preserves, you have the nice chunks of fruit throughout. It's great!! (if you buy the low-fat or no-fat dressing, it's a very good meal for a dieter, too!) Enjoy!

Fast Chicken Breasts

Ingredients:

  • 4 boneless skinless chicken breasts
  • 2 tablespoons margarine
  • 1 cup sour cream

Instructions:

Brown the chicken breast in margarine until cooked through. Remove chicken breasts and stir in sour cream until it becomes a sauce. Pour over chicken breasts. Thats it! We season to taste with whatever hits our fancy. Sometimes we add mushrooms or garlic.

Hamburger Casserole

Ingredients:

  • 2 cans biscuits (cheapest ones)
  • 1-2 lbs. hamburger, browned and drained
  • Cheese (shredded-cheddar, mozzarella, whatever)
  • 1 can or jar spaghetti sauce

Instructions:

After hamburger is cooked and drained, line the bottom of a 9x12 pan with the biscuits, touching (I use a roller to smooth out, but you don't have to) Place hamburger across the top. Next, spoon spaghetti sauce across the top of that and sprinkle with grated cheese, lots! Bake at 350 degrees for about 30-45 minutes. (Our oven takes 45 min. or the biscuits are doughy.) You can make with pepperoni instead or add your favorite toppings!

Dutch Babies

Ingredients:

  • 1/3 stick oleo or margarine
  • 3 eggs
  • 1 c. flour
  • 1 c. milk

Instructions:

Pour all in hot skillet and bake at 450* until browned and fluffed up. Serve with syrup, jelly, powdered sugar or salsa. I double the recipe.

Breakfast Casserole

Ingredients:

  • 8 slices bread, cubed
  • 1 lb. browned sausage, drained
  • 2 cups shredded cheddar cheese
  • 4 eggs
  • 2 1/2 cups milk
  • 3/4 tsp. dry mustard
  • 1 can Golden Mushroom Soup

Instructions:

Put bread in 9x13 inch pan. Add cheese and sausage. Beat eggs, milk and mustard. Pour over top. Cover and refrigerate over night. Next morning, mix soup with 1/2 cup milk and pour on top. Bake at 325* uncovered for 1 to 1 1/2 hours. Serves 10.

15 Minute Cheeseburger Rice

Ingredients:

  • 1 lb. ground beef, browned
  • 1 3/4 cups water
  • 2/3 cup catsup
  • 1 TBSP. mustard
  • 2 cups white rice (ex. Minute Rice)
  • 1 cup shredded cheddar cheese

Instructions:

Once ground beef is browned, drain and add water, catsup and mustard. Bring to boil. Stir in rice. Sprinkle with cheddar cheese; cover. Cook on low heat 5 minutes. Makes 4 servings.

Quick & Easy Broccoli Chicken

Ingredients:

  • 1 (6.9 oz.) pkg. Rice-a-Roni Chicken Flavor
  • 2 TBSP. Margarine or butter
  • 1 tsp. dried Basil
  • 4 boneless, skinless chicken breast halves (about 1 lb.)
  • 2 cups broccoli flowerets
  • 1 tomato, chopped
  • 1 cup (4 oz.) shredded Mozzarella cheese

Instructions:

Cook rice-vermicelli mix with margarine in large skillet on medium heat until vermiceli is golden brown. Add 2 cups water, Special Seasonings and basil. Bring to a boil on high heat. Place chicken on rice. Cover; reduce heat to low. Simmer 10 minutes. Stir in broccoli and tomato. Cover; simmer 10 minutes or until rice is tender and chicken is no longer pink inside. Sprinkle with cheese. Cover; let stand 3 minutes.

Southwest Beef Rice Skillet

Ingredients:

  • 1 lb. hamburger
  • 1 lg. onion, chopped
  • 1 med. green pepper, chopped
  • 1 can (8 oz.) tomato sauce
  • 1 can (14 1/2 oz.) Swanson Beef Broth
  • 3/4 cup uncooked white rice
  • 1 Tbsp. Chili powder
  • 1/2 tsp. Garlic powder

Instructions:

Cook hamburger, onion and green pepper in skillet until the meat is browned and the vegetables are tender. Stir to separate meat. Spoon or drain off fat. Stir in broth, tomato sauce, rice, chili powder and garlic powder. Heat to boiling. Cover; cook over low heat 20 minutes or until liquid is absorbed and rice is tender. Serve with shredded cheddar cheese and sour cream if desired.

Variation: Wrap this mixture in warm tortillas and serve with the sour cream and cheese. It is very good!

Lasagna

Ingredients:

  • 1 lb. browned hamburger
  • 1/2 to 3/4 onion, chopped
  • 1 pkg. Lasagna noodles, cooked
  • 1 can (6 oz.) tomato paste
  • 1 can water
  • 1 pkg. Swiss cheese, sliced
  • 1 pkg. Mozzarella cheese, sliced
  • 1 carton Cottage cheese

Instructions:

Drain noodles and ground beef. Add tomato sauce, water and onion to hamburger and simmer for about 5 minutes. On bottom of 9x12"pan, layer one layer of hamburger mixture (sauce), followed by one layer of cooked noodles, and one layer of Swiss cheese. Repeat layering sauce, noodles, and Cottage cheese. Final layer should be sauce, noodles, and Mozzarella cheese. Bake at 350* for about 15 minutes or until cheese melts.

This was given to me by my husband's mom. It has always been a family favorite!
