Finger Jello

Ingredients:

  • 4 pkg. Knox Gelatine
  • 3 pkg. jello (3 oz. size)
  • 4 c. boiling water

Instructions:

Stir until dissolved in 9x13 inch pan or larger. Put in refrigerator until set. Cut in small squares or
with fancy cookie cutters for a party or for fun.

Joyce's Chocolate Chews

Ingredients:

  • 1 Box German Chocolate Cake Mix
  • 2 eggs
  • 1/2 c. oatmeal
  • 1 c. semi-sweet chocolate chips
  • 1/2 c. oleo or margarine
  • 1/2 c. raisins

Instructions:

Combine mix, eggs, oleo and oatmeal. Mix well. Add raisins and chips. Drop by heaping tablespoons 2" apart on greased cookie sheet. Bake at 350* for 9 to 11 minutes. Cool 5 minutes before taking off pan. Makes 3 1/2 dozen.

One Step Pie

Ingredients:

  • 4 eggs
  • 6 Tbsp. butter or oleo
  • 1/2 c. flour
  • 1 c. sugar
  • 2 c. milk
  • 1 tsp. vanilla
  • 1 c. coconut (if you like-I use nutmeg)

Instructions:

Blend in blender for 3 to 4 min. Pour into greased and floured pie pan. Bake at 350* to 375* for 30 to 40 minutes.
Test with table knife-sets up like custard.

Fruit Pizza

Ingredients:

  • 1/2 c. powdered sugar {mix these three together, put
  • 3/4 c. soft margarine in pizza pan; pat to fit.
  • 1 1/2 c. flour Bake at 300* 10-12 min. Cool}
  • 1-8 oz. pkg. softened cream cheese {Beat untill creamy. Spread
  • 1/2 c. to 3/4 c. powdered sugar over cooled crust.}
  • 1 tsp. vanilla

Instructions:

Once the first two steps are finished, place fresh fruit on top. Kiwi, berries, pineapple, mandarin oranges, bananas, just anything you like. Can put mayonnaise with cream cheese for topping and top with fresh vegetables (cut small).
Use olives, cheese, mushrooms, or whatever you like!

Rhubarb Crisp

Ingredients:

  • 4 cups rhubarb, sliced
  • 2/3 cup flour
  • 1 1/2 cups sugar
  • 1 tsp. cinnamon
  • 1/2 cup butter or margarine

Instructions:

Layer rhubarb in ungreased 9x12" pan. Sprinkle with salt. Mix flour, sugar, cinnamon and butter til crumbly. Sprinkle over top of rhubarb. If you like Rhubarb, this is a very good recipe! Tart, but sweet!

Bread Pudding

Ingredients:

  • 4 cups bread, broken
  • 2 cups milk
  • 2 eggs
  • 1 cup raisins
  • 1 cup sugar
  • 2 tsp. cinnamon

Instructions:

Beat eggs, milk, sugar, cinnamon and raisins. Pour over bread and mix together. Bake 1 hour at 350*. (Casserole dish) Insert knife-should come out clean. Let sit for about 5 minutes before serving. Tip: soak raisins in hot water before adding, to plump. Drain just before you add them to the mixture.
I was given this recipe by my husband's mom, and it is very good! Our kids love it!

Old-Fashioned Apple Cake

Ingredients:

  • 1 cup salad oil (Puritan, Crisco)
  • 2 cups sugar
  • 2 eggs
  • 2 1/2 cups flour
  • 1 tsp. Baking soda
  • 1 tsp. Cinnamon
  • 1 tsp. salt
  • 1 tsp. Baking powder
  • 1 cup nuts
  • 3 cups chopped apples
  • 1 (6 oz.) pkg. Butterscotch chips

Instructions:

Mix together: oil, sugar and eggs. Sift together: clour, soda, cinnamon, salt and baking powder. Add this to first mixture. Stir in nuts and apples. Sprinkle with butterscotch chips. Bake in 9x13" pan at 350* 45-60 minutes.
My husband's Grandma Pielstick gave this recipe to me, after she'd made it for a family get together. I loved it! It's very good and pretty easy to make!

Lazy Day Cobbler

Ingredients:

  • 1 1/2 cups sugar
  • 1 cup flour
  • 1 1/2 tsp. Baking powder
  • 1/4 tsp. salt
  • 3/4 cup milk
  • 1 lg. can fruit** (drained)
  • Cinnamon (to sprinkle on top)
  • 1 stick butter or margarine (1/2 cup)

Instructions:

Place butter or margarine in 9x13" pan. Melt in oven. Mix together 1 cup of the sugar, flour, baking powder and salt. Add milk and mix to a smooth batter with hand whisk. Pour over melted butter; don't stir. Empty fruit over batter. Sprinkle with remaining 1/2 cup sugar and cinnamon. Bake at 350* for 30 minutes. Batter will rise to top and brown. Center test as you would for cake doneness. ** You can use any type of canned fruit-i.e. peaches, cherry pie filling, etc.
I received this recipe from my mother many years ago. My family and I love it! It's so easy, but it looks and tastes like you've worked very hard! Our oldest daughter loves to make it!
